VINEYARD: Vineyards of 25 to 45 years old. They have average production of 5,000 kg/ha and clayey-calcareous soil.
MALOLACTIC FERMENTATION: 30 days in American and French oak barrels.
AGEING: 18 months in American and French barrels.
The COLOUR is vivid, intense and deep cherry red, as well-defined by the vintage year.
On the NOSE, the aromatic attack is intense, with caramel, toffee and toasted notes, and it is very reminiscent of dark chocolate. It has marked balsamic notes but a strong wine base with overripe fruit.
In the MOUTH, we taste a powerful, well-structured, balanced and round wine with personality. It has a long aftertaste, with persistent roasted notes in the finish.
Las Tresmatas Mountain is one of the most beloved hills to the people of Quintanilla. Three ancient holm oaks once topped this mountain, and when lightning struck one of them, it created the scene visible from the village with one tree missing, as depicted on our label, generating a whole legend around this event.
The wine is fermented with its own grape skins for 15 days at 28ºC, with cold pre-maceration for four days. Once devatting is performed, malolactic fermentation takes place for one month in American and French barrels. The ageing process is carried out in American and French oak for a minimum of 18 months.
