A “snow pit” or “fridge” was a well in which shelter del sol snow was stored during the winter months for use in the summer months. The cold served both to prepare “ice cream” for the nobles and to preserve food, especially fish. At the end of the summer, the well was cleaned and fixed. When the winter snowfalls arrived, it was filled with snow from the contours, placing the compacted snow evenly in layers separated by layers of straw to better insulate the snow and facilitate its removal.
